A blend of 81% Merlot & 19% Pinot Noir, this rosé is delicate & elegant in style, with flavours of strawberry, rhubarb, grapefruit, honey, mint leaves & orange blossom.
The Pinot Noir that went into our rosé was grown at Forgotten Hill and the Merlot in Okanagan Falls. The Merlot was grown on a Geneva Double Curtain trellis system, providing an intense concentration of flavours and aromas. The very early start to the year began with a mid-April bud-break and a very warm May. These were followed by a rainy June and July, providing lots of growth, and an abundant crop. A cool August and September allowed for prolonged maturation on the vine, and extensive flavour development.
The Pinot Noir was harvested on September 30th, 2016, at 23.1 degrees Brix. For the Pinot Noir, we used the saignée method: the grapes were crushed, then cold soaked for two days before drawing off the portion for the rosé. It was then divided into two stainless steel tanks, both of which enjoyed a long, cool fermentation at 13°C over 18 days.
The Merlot was harvested October 24th, 2016, at 24.2 degrees Brix, then destemmed and crushed, and left in contact with the skins for 4 hours before being given a light pressing. The Merlot was fermented slowly and divided into two stainless steel tanks as well, at 14°C over a period of 25 days. We were pleased to find that each of the four tanks brought different complementary characteristics to the wine, with the result being a fruity, dry rose which exhibits not only the run-of-the-mill strawberry-rhubarb, but also a more Provençal character with plenty of minerality and savoury aromas of fresh Mediterranean herbs.
